Le cacao équitable: une question de survie pour la communauté maya

Partout dans le monde, les peuples autochtones font face au même défi: leur disparition! Durant ma dernière mission en Amérique Centrale, j’ai pu constater la résilience du peuple maya et combien leur histoire, identité et survie est dépendante de ce trésor de la nature, aliment des Dieux, que représente le cacao.

Cacao équitable: qu’est-ce que c’est au juste?

Nous recherchons les logos style ‘Fair Trade’ parce qu’au fond, on ne sait pas trop ce qui se passe! Comment le cacao est-il devenu une industrie aussi puissante décimant des cultures entières et affectant autant l’environnement? J’ai eu envie de partager l’histoire telle qu’elle m’a été racontée par les personnes que j’ai rencontré durant cette mission afin que nous puissions comprendre les racines du problème, ou plutôt des problèmes causés par l’industrie du cacao au fil des siècles.

Au Guatemala, dans un petit village bordant le lac Atitlan, j’ai eu l’occasion de vivre une cérémonie du cacao telle que les mayas la pratiquent encore aujourd’hui. J’ai également pu bénéficier d’une connaissance ancestrale sur la place du cacao dans la culture maya. Le cacao, pour les mayas, c’est pratiquement la base de tout! Sans cacao, pas d’identité.

Chocolat, en langue maya,  »xocoatl », signifie Agua amarga. Eau amère. C’est cette médecine des dieux qui ne peut pas être corrompu avec du lait, du sucre ou autre ingrédients artificiels. Encore aujourd’hui, un vrai cacao maya sera composé d’eau et de cacao, parfois agrémenté d’un peu de cannelle ou de chili. Ce liquide est effectivement amère, mais on lui confère des propriétés médicinales autant que spirituelles. C’est également délicieux! Chose certaine, après une cérémonie de cacao maya, vous ne verrez plus la vie de la même manière… Mais ceci est une histoire pour un autre article!

Le côté noir du chocolat

Avant que l’amerique soit conquise, et même découverte, les mayas occupaient une bonne partie du territoire du Mexique, Guatemala et Belize. Ce sont eux qui ont commencé à  »transformer » le cacao, c’est à dire fermenter les grains pour en faire un breuvage, initialement réservé aux rois et autres personnes importantes de leur société. En arrivant sur le sol mesoaméricain, les ‘conquistadors’ ont commencé à en vouloir pour eux-mêmes, et même à transporter des fèves sur leurs bateaux vers la France, l’Espagne et autres pays d’Europe. Ce cacao était le cacao dit ‘natif’, encore intouché, adapté au sol d’origine. Naturellement, durant ces voyages qui duraient des mois, une très grande proportion du chargement était perdu. Il y donc eu d’énormes pertes et une décimation des cultures qui s’en est suivie.

Le cacao est une plante fragile, mais rustique. Une de ses qualités (qui s’est plus tard transformée en menace) est qu’elle est grandement sujette à l’hybridisation, tant naturelle qu’artificielle. La souche native a lentement évolué en cacao Criollo, celle qui est encore considérée la souche ancestrale par les cultures mayas. Ensuite, on a vu apparaître une souche plus résistante, Trinitario. Celle-ci comportait plus de fèves par cosse, donc plus rentable et plus résistante. Cette souche a pu mieux résister aux voyages en bateau, et c’est celle qui fut cultivée en Afrique de façon traditionnelle. Mais l’eau se faisant rare en Afrique et le sol étant peu adapté au cacao, du moins au début avec les procédés ancestraux, les colonisateurs ont résolu le problème en amenant la main d’oeuvre gratuite, les esclaves noirs, sur le sol mésoamericain. C’est donc le trinitario d’Afrique qui a pu voyager à nouveau vers son sol d’origine. Pendant des siècles, l’industrie du chocolat s’est développée grâce au travail des esclaves noirs sur les plantations de cacao en sol mesoamericain.

Avec l’arrêt de l’esclavage des noirs, l’industrialisation a ensuite pris le relais avec une souche hybride artificielle, le Forestario. Cette souche est ultra-performante, son rendement et sa résistance permet de grandes marges de profit aux Cacao Barry, Belcolade et Hershey’s de ce monde. Les cultivateurs traditionnels mayas qui cultivent encore le Criollo aujourd’hui ne sont pas de taille contre ces géants. Il ne reste que 10% des plants de cacao qui sont des Criollos dans le monde.

L’hybridisation artificielle est toujours un cadeau empoisonné. Avec un plant de Criollo, ou même de Trinitario, on peut encore récolter la graine et replanter sa plantation. Avec une graine de Forestario, les fèves qui en résultent sont stériles. Le cultivateur dépend donc de nouvelles graines ou ‘semences’ vendues par l’industrie du chocolat pour que la production continue. Un couteau à double tranchant pour les communautés surtout africaines qui survivent grâce à l’industrie du chocolat. Sans compter que des millions d’enfants y sont exploités pour produire ce qu’on appelle aujourd’hui le ‘chocolat’, mais qui n’a rien à voir avec le cacao d’origine. De plus, quand un agriculteur moderne décide de produire du cacao hybride à côté d’une plantation traditionnelle, comme c’est le cas au Mexique ou au Guatemala, l’hybridisation naturelle des plants Criollo fait ses dommages, en rendant elle aussi les plants criollos stériles. Sans compter les dommages à l’environnement de ces monocultures, pour lesquels on doit couper à blanc des kilomètres de territoires. De plus, la perte de diversité de la flore et de la faune qui s’en suit est à crever le coeur. Des centaines d’espèces d’orquidées rares, entre autres, qui poussent sur les arbres, sont parmi les victimes.

C’est donc grâce à l’exploitation de deux continents étrangers que l’industrie du chocolat s’est bâtie, et c’est ainsi qu’on voit disparaître le cacao traditionnel. Ce n’est pas que le cacao qui est menacé, c’est tout un peuple et son habitat. Ultimement, c’est une grande perte pour l’humain.

De la culpabilité à la responsabilité

Lorsque j’ai fondé Nutrition sans Frontières, je venais de prendre un cours de chocolaterie et donc de découvrir une nouvelle passion. Je pouvais déguster mes créations sans tracas, loin de m’imaginer que c’était des enfants qui avaient souffert pour que je puisse en profiter. Lorsque je l’ai appris, j’ai étouffé cette passion, en me disant qu’un jour, au travers des actions de Nutrition sans Frontières, il y aurait une façon que je puisse retourner à la source et encourager un petit producteur quelque part en Afrique. Je n’en ai pas trouvé! Aussi bien chercher une aiguille dans une botte de foin! Et des pastilles de chocolat équitable pour chocolaterie, ça n’existe pas vraiment…

J’ai cherché dans les Fair Trade, dans les coopératives agricoles, sans succès, sans jamais avoir la preuve que la production était réellement équitable. Ce n’est qu’en revenant aux sources en territoire maya que j’ai pu trouver de multiples petits producteurs qui consacrent toutes leurs ressources familiales pour faire revivre le cacao traditionnel. J’en ai choisi une qui m’a accueilli à bras ouvert, snas rien demander en retour. J’ai constaté le grand besoin de soutien de ces peuples pour pouvoir survivre contre le Goliath de l’industrie.

Un peuple en voie d’extinction

Les défis des peuples mayas ne sont pas que de l’histoire ancienne. De puis toujours cette culture est menacée, mais un génocide dont on n’entend pas beaucoup parler a quand même tué entre 150 000 et 200 000 mayas dans les années 1980. Ainsi, la proportion de personnes s’identifiant à cette culture est passée de 52% à 38.8% suite au génocide.

Tant bien que mal, ce peuple cherche à se reconstruire. J’ai pu entendre cette histoire de la bouche d’un père de famille qui depuis trois ans se dévoue à la culture du cacao tel que transmis par ses ancêtres. Sans broncher ni même verser une larme, il m’a raconté comment il a perdu son père dans ce génocide à l’âge de 7 ans. Ce génocide est une réalité bien d’actualité pour les peuples autochtones mayas. Visiter le Guatemala sans s’immerger de la culture maya, sans comprendre son identité, c’est comme manger du chocolat Nestlé. C’est passer à côté d’un grand morceau de l’histoire!

Le cacao: un aliment de tous les jours?

Le chocolat version industrielle de tous les jours ne vous apportera pas de bénéfices, à part pour vous sucrer le bec. Par contre, si on en croit les mayas, le cacao traditionnel, à l’état pur, a des propriétés uniques sur la santé physique et psychologique. De plus en plus, on reconnaît son effet anti-dépresseur grâce à la théobromine. Mais attention: le cacao Forestario contient surtout de la caféine. C’est une des vertus qu’il a perdu avec l’hybridisation.

Pour constater les effets, il suffit de prendre quelques grains torréfiés de cacao criollo. Les effets s’installent tranquillement en quelques heures, laissant un sentiment de feel-good qui n’a rien à voir avec les montagnes russes des médicaments. Tout en douceur, le cacao vous donne de la joie. C’est d’ailleurs une joie que les mayas décrivent précisément à travers leur spiritualité: De la joie envers vous-même. Et si vous vous aimez, vous aimerez les autres, vous aimerez la nature.

La base d’une cérémonie du cacao doit obligatoirement comporter trois étapes pour pouvoir en ressentir les bienfaits, selon la tradition maya. Premièrement, il faut se ‘grounder’, se connecter à la Terre Mère, respirer, entrer en soi. Deuxièmement, il faut se mettre dans un état de gratitude, dire merci. Troisièmement, on peut porter une intention. Une intention à notre journée, à notre semaine, à notre année ou même notre vie. Selon moi, vivre plus intentionnellement est l’une des grandes récompenses d’intégrer le cacao dans sa routine quotidienne.

Encourager les plantations familiales équitables, un geste pour l’humanité

Perdre cette sagesse serait une grande perte pour l’humanité. La culture maya est d’une richesse spirituelle incroyable et gagne à être partagée au plus grand nombre. Aujourd’hui je réalise à quel point tous les continents sont interreliés et combien l’un n’aurait pas pu se développer sans l’autre.
